Chocolate Zucchini Cake

This moist, dense cake is quick to stir together and makes use of the surplus zucchini that’s inevitable in our neighbourhood at the end of every summer.

Serves 12 to 16.

2 cups (500 mL) all-purpose flour

1 1/2 cups (375 mL) granulated sugar

1/2 cup (125 mL) unsweetened cocoa powder

1 tsp (5 mL) each baking powder and baking soda

1/2 tsp (2 mL) salt

1 cup (250 mL) plain yogurt or sour cream

2 tsp (10 mL) vanilla

2 cups (500 mL) coarsely grated zucchini

1/2 cup (125 mL) chocolate chips (optional)

Preheat the oven to 350˚F (180°C). Line a 13 x 9 inch (3 L) baking pan

with parchment paper; set aside.

In a large bowl, whisk together the flour, sugar, cocoa,

baking powder, baking soda and salt.

In a smaller bowl, whisk together the yogurt, oil, eggs and vanilla.

Stir into the flour mixture, along with the zucchini, stirring just until

the two are incorporated and there are no more streaks of flour.

Stir in the chocolate chips, if using.

Scrape the batter into a prepared pan and bake for 25 minutes,
