Grilling On CHIN TV-Bacon Wrapped Nacho Stuffed Pork Tenderloin

We had so much fun yesterday on CHIN TV Sunday showcase of Festival di Johnny Lombardi to talk about grilling some summer time recipes! 

We changed up the usual nachos and put them into our pork tenderloin and roasted it in the pizza oven, but not to worry you can use your regular oven or cook it outside on your grill or smoker! 

Here is the recipe for the Nacho Stuffed Pork Tenderloin we made, hope you enjoy it! Serve it up with some extra salsa and queso for dipping. 


Bacon Wrapped Nacho Stuffed Pork Tenderloin

Bring out extra salsa and cheese sauce to serve up these slices of tenderloin. This is a great way to use up those crumbs in the bottom of the tortilla chip bag! 


Makes 6 to 8 servings.


1 tbsp (15 mL) canola oil

1 onion, finely chopped

1 large clove garlic, minced

1 tbsp (15 mL) minced pickled jalapeno peppers (optional)

2 tsp (10 mL) chili powder

1 tsp (5 mL) dried thyme leaves

1/4 tsp (1 mL) each salt and pepper, divided

1 cup (250 mL) crushed tortilla chips

1/2 cup (125 mL) shredded old cheddar cheese

1/4 cup (60 mL) medium salsa

2 pork tenderloins (about 1 1/4 lb/600 g each)

10 slices side bacon


In a nonstick skillet, heat oil over medium heat and cook onion, garlic, jalapeno peppers, if using, chili powder, thyme and half each of the salt and pepper, stirring for about 5 minutes or until softened. Stir in chips, cheese and salsa; set aside.


Make a long slice down centre almost all the way through pork tenderloin and another 2 long slices down the centre of each side to open up the tenderloin. Repeat with the other tenderloin. Sprinkle with remaining salt and pepper. Divide mixture among both tenderloins, fold in thinner end and close to seal.


Wrap each tenderloin with bacon and place on rack on baking sheet or in roasting pan. Roast in 400 F (200 C) pizza oven for about 30 minutes or until bacon is crisp and hint of pink remains and an internal temperature is about 155F (68C). 


Let cool slightly before slicing. Serve with your favourite salsa and nacho cheese dip.
