Asparagus Time is here!
Oh what joy, I had some perfectly grilled #asparagus last night and pretty much finished the entire platter! Yes it is truly a love of this time of year for home cooks and restaurants. Use it up and enjoy, but-yes there is a but there. It's a bit chilly in the evenings do you want to simply have grilled asparagus. Of course! But why not incorporate it into some warm dishes too, just in case you need to warm up from the cool evening or the air conditioning at work!

Asparagus Lentil Curry
Bringing together two green vegetables to make a delicious almost creamy curry perfect to enjoy with in season asparagus. This mild flavoured curry is a great way to introduce new flavours to your family. Don't forget the naan to sop up what's left in the bowl!
Prep time: 10 minutes
Cook time: 40 minutes
Serves/Yield: 4 servings (4 cups/1 L)
1 tbsp (15 mL) canola oil
1 onion, chopped
4 cloves garlic, minced
1 tbsp (15 mL) minced fresh ginger
2 tbsp (30 mL) mild curry paste
3/4 cup (175 mL) green lentils
3 cups (750 mL) vegetable broth
1 bunch fresh asparagus, trimmed and chopped
3 tbsp (45 mL) chopped fresh cilantro
In a saucepan, heat oil over medium heat. Add onion, garlic and ginger; cook, stirring for 3 minutes or until softened. Stir in curry paste and cook for 1 minute. Add lentils and stir to coat. Add broth and bring to a simmer. Cover and simmer gently for about 30 minutes or until lentils are tender. Stir in asparagus; cook for 5 minutes. Serve sprinkled with cilantro.
