Chocolate Strawberry Pinwheels

Here’s a little treat for Valentine’s Day that can be made ahead or enjoyed anytime of the year. A simple but elegant chocolaty biscuit filled with decadent fruit jam and chocolate will warm your heart and the kitchen.

2 cups (500 mL) all-purpose flour
1/4 cup (60 mL) granulated sugar
1 tbsp (15 mL) baking powder
1/4 tsp (1 mL) salt
1/2 cup (125 mL) salted butter, cubed
1/2 cup (125 mL) milk (approx.)
1/2 cup (125 mL) chunky strawberry or cherry jam or preserves
1/3 cup (75 mL) chocolate chips

Icing:
1/4 cup (60 mL) icing sugar
Milk

In a large bowl, combine flour, sugar, baking powder and salt. Using pastry blender or fingertips cut in butter until mixture resembles coarse crumbs.Drizzle milk over top and bring together with fork. Using hands bring dough together to form soft, slightly sticky dough.

On lightly floured surface, knead dough gently about 10 times. Roll out dough to about a 13 inch (32.5 cm) square. Spread evenly with jam, leaving about 2 inches (5 cm) at one end. Start rolling up jelly roll style towards end with space and pinch edge to seal. Slice into 12 pieces and place in an 11 x 7 inch (27.5 cm x17.5 cm) parchment paper-lined baking dish. (Make-ahead: Cover well and freeze for up to 2 weeks. Remove from freezer and let thaw in refrigerator overnight.)

Bake in 400ºF (200ºC) oven for 20 to 25 minutes or until golden. Let stand 10 minutes before serving.

Icing: Meanwhile, place icing sugar in a small bowl. Whisk in a little milk until a thick but fluid icing forms. Drizzle over pinwheels before serving.

Makes 12 pinwheels.

Storage: Wrap biscuits and pan with plastic wrap and then a layer of heavy duty foil for the freezer. Be sure to not put anything heavy on top of it in the freezer or the pinwheels will get crushed.
