No Yeast Savoury Bread

I see through social media the struggles many are having with not finding yeast but want to enjoy some bread baking. Quick loaves that include muffins, breads and loaves are a perfect way to bake with using yeast.

These savoury version is also a great way to use up some extra bits you have have lurking in the fridge. Asparagus season is around the corner and 1 cup (250 mL) chopped would be a great substitute from the zucchini. Zucchini Ham Cornmeal Loaf

This savoury loaf is perfect to snack on or enjoy served alongside brunch. This also makes a perfect addition to a plate of scrambled eggs or for lunch or dinner with a bowl of soup or salad.

Prep time: 15 minutes
Cook time: 40 minutes
Yield: 1 loaf or 12 to 16 slices

1 cup (250 mL) all-purpose flour
1/2 cup (125 mL) cornmeal
1 tsp (5 mL) baking powder
3/4 tsp (4 mL) baking soda
1/4 tsp (1 mL) salt
1 cup (250 mL) milk
1 egg
1/4 cup (60 mL) butter, melted
1 small zucchini, shredded and squeezed 
1 cup (250 mL) shredded Old Cheddar cheese
1/2 cup (125 mL) diced ham or crumbled cooked bacon

Preheat oven to 400 F (200 C). Line an 8 x 4 inch (1.5 L) loaf pan with parchment paper; set aside.

In a bowl, whisk together flour, cornmeal, baking powder, soda and salt.

In another bowl, whisk together milk, egg and butter. Pour over flour mixture and stir until just combined. Stir in zucchini, cheese and ham.

Spoon batter into prepared pan. Bake for about 40 minutes or until cake tester inserted in centre comes out clean and top is golden brown. Let cool in pan on cooling rack. Remove from pan and slice.

Variation: Want to change up the flavour of this loaf, try other cheeses like provolone or fontina. For a bigger flavour reduce the amount to 1/2 cup (125 mL) and use some crumbled blue cheese.
