Fun Friday!

The weekends are so much fun! And when you get to spend them with friends it is even better. We went to a friends' house on Friday and had a great dinner and drinks. Yes of course drinks first and oh what a summery drink we enjoyed. It was all about forcing that sun to come out and you know what I think it worked!
Little umbrellas and chunks of pineapple on the rim of the glass made the flavour so much more summery not to mention the coconut rum:) Such tasty appetizers too and great conversation.
Now we all the adults were enjoying the company and food, we were 8, the children, there was 11 of them were playing and having fun. Oddly enough none of them were looking for food or drink, remember doing that?
We as adults look forward to those get togethers to talk, laugh and eat and kids enjoy them too, but really just for the camaraderie of being with their friends. Ah youth!
But I'll tell you, we as adults laughed and joked and had just a great time too. Our hostess outdid herself with a delicious meal of grilled stuffed chicken and pork with 2 scrumptious salads and a beautifully grilled platter of vegetables. Now if that wasn't enough, cuz trust me I was stuffed with the appetizers from before our dinner too that included tapenade topped goat cheese pita wedges, crab nacho dip and chicken and cheese pinwheels. We had 2, yes I wrote 2 desserts!
And of course just as yummy, ice cream pie and lemon curd cheesecake. What an evening!
What made it really great was that not only did the parents have fun the kids did too. So it made me think, I need to have more fun in life and joke around with friends and perhaps not focus so much on the eating part...who am I kidding!
So in the end I wanted to enjoy a drink and a fun one at that so I thought I would share one of my favs for summer. I hope you enjoy it too!

Alfresco Sunset
In the evening before and after dinner on the porch is the perfect time to enjoy a refreshing beverage. This punch has the flavour of summer in it and with punches of red and orange brings out the natural hues of a great summer sunset.

4 cups (1 L) peach juice or nectar
3 cups (750 mL) sparkling wine such as Prosecco or gingerale
2 cups (500 mL) orange juice
1 cup (250 mL) cranberry juice
1/2 cup (125 mL) grenadine
2 cups (250 mL) small strawberries, frozen
1 cup (250 mL) raspberries, frozen
Maraschino cherries (optional)
Fresh orange wedges (optional)

In large bowl or pitcher, combine peach juice, wine, orange and cranberry juices and grenadine. Refrigerate until ready to serve.

Add frozen strawberries and raspberries when ready to serve. Pour into tall glasses and garnish with maraschino cherries and orange wedges, if desired.

Makes about 10 cups (2.5 L).
Tip: Look for local fresh fruit and wash and freeze for use in summer drinks as ice cubes. Perfect to keep drinks cold and the fruit flavour adds more appeal.
